It grows mainly close to the dry stone walls that delimit the terraces. The soil of Pantelleria, of volcanic origin, is particularly rich in substances. Pantelleria oregano has an unmistakable scent different from others grown in the rest of Italy. Dried in the shade for 10-15 days, after being harvested between the end of May and the beginning of June, the leaves are then separated from the branches and preserved to keep the aromas and flavors unchanged.
